    A Dalmore of a 17 year old chosen by the Huntly bottler Duncan Taylor, distilled in 2006, from cask 1036113, bottled at 50.8%, one of 78 bottles. Dalmore is the Highland malt of the Royal Stag, rich with orange, chocolate and sherry. The Dalmore range climbs to some of the oldest and most expensive whiskies in the world.

    It was worked through flat topped and water jacketed stills for a rich, oily spirit, to build a rich, sherry loving character. First fill bourbon gave a fuller vanilla and orange over the rich spirit. At oxidative maturity aldehydes and esters lend dried fruit while ellagitannins add a drying, tannic grip. Maturation in the cool north keeps the rich spirit balanced over the years. The thick spirit shows the sherry clearly, dried fruit and orange over a malty depth. The rich, dried fruit style runs through the core range, from the twelve year old upward.

    Bottled at a cask strength 50.8%, it is rich. A rich, sherried sweetness, with a soft vanilla from the oak. The texture is thick and oily, the fruit lifted by a rich sherry. The finish runs rich, fruity and warm. This is Dalmore, rich with orange and dark chocolate.
