Description
From the Glasgow bottler Douglas Laing, a 15 year old Dalmore, distilled in 1991, from cask DL 2458, bottled at 50%, one of 357 bottles. Dalmore is a rich, marmalade and dark chocolate Highland single malt of real opulence. It is owned by Whyte and Mackay, and its King Alexander III bottling nods to the clan legend.
Drawn off stills whose cooling jackets build a rich, oily spirit, to build a rich, sherry loving character. Ex-Bourbon casks held it, the oak letting the full bodied, oily character lead. Into oxidative maturity, slow air ingress builds fruity ethyl esters (orange and dried fruit) over the chocolatey, sherried depth. The rich, oily spirit takes cask flavour superbly, especially aged sherry wood. Water comes from the River Averon, drawn from Loch Morie in the hills above. Its flat topped wash stills and water jacketed spirit stills build a thick, rich, oily spirit.
Bottled at a cask strength 50%, it is rich. A full, dried fruit richness, with a soft vanilla from the oak. Marmalade, chocolate and dried fruit fill the middle. A full, sherried finish ends on orange and dark chocolate. This is one of the Highlands' most opulent single malts.
