Description
This Dalmore was bottled by A.D. Rattray, a 10 year old, distilled in 2007, from cask 2120, bottled at 55.6%, one of 317 bottles. Dalmore is a full bodied, sherried Highland single malt from the shores of the Cromarty Firth. Water comes from the River Averon, drawn from Loch Morie in the hills above.
Run through the distillery's unusual flat topped and water jacketed stills, for a full, opulent Highland spirit. An Oloroso hogshead lent dried fruit, walnut and a dark, treacly depth, soaked up by the heavy spirit. By the integrating teens congeners fade and esters build, the rich, oily spirit growing rounder. The cool Highland air on the firth gives a slow, even maturation. Its spirit stills wear cooling water jackets, condensing the heavier compounds back for a fuller body. It is owned by Whyte and Mackay, and its King Alexander III bottling nods to the clan legend.
Bottled at a cask strength 55.6%, it is rich. A full, dried fruit richness, with raisin, date, fig and treacle from the cask. It is full and rich, the opulent spirit shining through. The finish is deep, sherried and dark. This is one of the Highlands' most opulent single malts.
