Dailuaine is a robust Speyside distillery at Carron, near Aberlour. Its rich, heavy malt is a backbone of the Johnnie Walker blends. This is Dailuaine’s heavy, meaty Speyside style.

From A.D. Rattray, a 6 year old Dailuaine, distilled in 2011, from cask 800468, bottled at 59.6%, one of 256 bottles. Dailuaine, whose name is Gaelic for the green vale, is a heavy, full bodied Speysider. Water comes from the Bailliemullich Burn, the spirit drawn off three wash and three spirit stills.

The spirit was worked through the big stills for a meaty, malty spirit, building the heavy Dailuaine style. An ex-Bourbon barrel shaped it, vanilla beneath the robust, full bodied spirit. In these extractive early years the oak gives vanillin as vanilla and oak lactones as coconut over a robust, meaty malt. The slow loss of the angel's share concentrates the rich, malty core over the years. It passed to DCL and Scottish Malt Distillers in the 1920s and was later modernised. The rich, full bodied spirit takes cask flavour well, especially sherry wood. Vanillin and oak lactones from the wood lend vanilla and coconut over the meaty malt.

At a natural 59.6% it is full and honeyed. Baked fruit, fig and a savoury depth, with a soft vanilla from the oak. A baked fruit and a warm spice lift it. The close is long, fruit over a rich malt. This is the rich, full bodied Speyside malt of Dailuaine.
