Description
This Dailuaine was bottled by the bottler Scotch Malt Whisky Society, a 30 year old, distilled in 1984, from cask 41.64, bottled at 53.3%, one of 210 bottles. Dailuaine sits at Carron on the Spey, a big, sherried Speyside malt rarely seen on its own. It sits near Aberlour, in the heart of Speyside by the River Spey.
The spirit was made in large copper stills for a rich, robust make, for the rich, full bodied make Dailuaine is known for. It was matured in refill ex-Bourbon oak, vanilla and a soft honey behind the rich malt. Ethereal and old, decades draw the malt to a rich, waxy depth of sotolon, old oak and dried fruit. The rich, full bodied spirit takes cask flavour well, especially sherry wood. Water comes from the Bailliemullich Burn, the spirit drawn off three wash and three spirit stills. The big stills give a heavy spirit that takes a long, sherried maturation in its stride.
Bottled at a cask strength 53.3%, it is rich. Malt, dried fruit and a rich spice, with a soft vanilla from the oak. A dried fruit and a malty depth give it weight. The finish is long, rich and savoury. This is the robust, sherried malt of Carron.
