The bottler The Firkin Whisky Co. Ltd bottled this Dailuaine, distilled in 2012, from cask SC13A, bottled at 48.9%. Dailuaine is a rich, meaty Speyside single malt from the banks of the Spey near Aberlour. Its big stills give a heavy, full bodied spirit that takes sherry wood especially well.
It was distilled in large conical necked stills on Bailliemullich Burn water, building the heavy Dailuaine style. Maturation in an Oloroso cask laid dried fruit over the meaty, malty spirit. No age is given, but vanillin vanilla and a full bodied malt are well integrated. The cool Speyside air gives a slow, even maturation, the heavy malt deepening. Long ageing turns the fresh fruit towards dried fruit, fig, leather and a warm spice. The rich, full bodied spirit takes cask flavour well, especially sherry wood. The slow loss of the angel's share concentrates the rich, malty core over the years.
At 48.9%, undiluted, it is deep and fruity. Orchard fruit, malt and a warm spice, with dried fruit, fig and walnut from the cask. It is robust and fruity, the full bodied spirit shining through. It finishes robust, malty and warm. This is a rich, dried fruit laden Speyside single malt.
