Dailuaine is a robust Speyside distillery at Carron, near Aberlour. This is one of Speyside’s heavier single malts.

Description
A 17 year old Dailuaine from the bottler Scyfion, distilled in 2007, bottled at 55.8%, one of 150 bottles. Dailuaine was founded in 1852 by William Mackenzie, and was the first distillery to wear the pagoda roof. Water comes from the Bailliemullich Burn, the spirit drawn off three wash and three spirit stills.
It was distilled for the heavy, full bodied spirit Dailuaine is known for, for the rich, full bodied make Dailuaine is known for. It rested in ex-Bourbon oak, the wood adding vanilla and a soft honey. Into oxidative maturity, slow air ingress builds fruity ethyl esters (apple and dried fruit) over the meaty, malty depth. Vanillin and oak lactones from the wood lend vanilla and coconut over the meaty malt. The full bodied make rewards a long, patient maturation in good wood. Dailuaine's heavy, malty make is prized by blenders for the body it gives. Its rich, robust malt has long been a backbone of the Johnnie Walker blends.
At a natural 55.8% it is full and honeyed. A rich, full bodied sweetness, with a soft vanilla from the oak. Beneath it run dried fruit, malt and a savoury edge. It finishes robust, malty and warm. This is the rich, full bodied Speyside malt of Dailuaine.
