Water comes from the Bailliemullich Burn on the banks of the Spey. Its big stills give a full bodied spirit that loves sherry wood. This is the rich, full bodied Speyside malt of Dailuaine.

A Dailuaine of a 16 year old chosen by Sukhinder Singh's Elixir Distillers, distilled in 2007, from cask 300029, bottled at 53.5%, one of 181 bottles. Dailuaine is a full bodied Speyside malt of real depth, mostly bottled by independents. The name is Gaelic for the green vale, after the hollow in which the distillery sits.
Worked through the big stills for a meaty, malty spirit, giving the heavy, meaty spirit at its heart. It rested in ex-Bourbon oak, the wood adding vanilla and a soft honey. At oxidative maturity aldehydes and esters lend dried fruit while ellagitannins add a drying, savoury grip. Long ageing turns the fresh fruit towards dried fruit, fig, leather and a warm spice. Most of its make goes to blending, with a Flora and Fauna sixteen year old the regular single malt. The full bodied make rewards a long, patient maturation in good wood.
At 53.5%, undiluted, it is deep and fruity. Dried fruit, malt and a rich, savoury depth, with a soft vanilla from the oak. The texture is full and rich, the fruit lifted by a meaty malt. A full, malty finish ends on dried fruit and a warm spice. This is the rich, full bodied Speyside malt of Dailuaine.
