    A Dailuaine of a 16 year old from A.D. Rattray, at 55.2%. Dried fruit, malt and a rich, savoury depth run through it, with dried fruit, fig and walnut from the cask. Its rich, heavy malt is a backbone of the Johnnie Walker blends. Single malt Dailuaine is rare, so most come from independents. This is Dailuaine’s heavy, meaty Speyside style.

    From A.D. Rattray, a 16 year old Dailuaine, distilled in 1998, from cask 5125, bottled at 55.2%, one of 269 bottles. Dailuaine is a robust Speyside distillery at Carron, making a full bodied malt mostly for blends. In 1889 it became the first distillery to use the pagoda roof, the Doig Ventilator designed by Charles Doig.

    The spirit was made in large copper stills for a rich, robust make, building the heavy Dailuaine style. A Pedro Ximenez cask added raisin, date and a treacle sweetness. Into oxidative maturity, slow air ingress builds fruity ethyl esters (apple and dried fruit) over the meaty, malty depth. The clean spirit shows the cask clearly, vanilla and fruit over a rich malt. The full bodied make rewards a long, patient maturation in good wood. The name is Gaelic for the green vale, after the hollow in which the distillery sits. It sits near Aberlour, in the heart of Speyside by the River Spey.

    At a natural 55.2% it is full and honeyed. A heavy, malty fruitiness, with dried fruit, fig and walnut from the cask. A baked fruit and a warm spice lift it. A full, malty finish ends on dried fruit and a warm spice. This is a rich, malty Speyside single malt.
