The bottler The Taste of Whisky bottled this Dailuaine, a 14 year old, distilled in 2011, from cask 304727, bottled at 52.5%, one of 255 bottles. Dailuaine, whose name is Gaelic for the green vale, is a heavy, full bodied Speysider. The distillery was founded in 1852 by William Mackenzie on the banks of the Spey at Carron.
The spirit was run through the distillery's big copper stills, to build a robust, malty, sherry loving character. It rested in ex-Bourbon oak, the wood adding vanilla and a soft honey. By the integrating teens congeners fade and esters build, the rich, full bodied spirit growing rounder. Years in oak round the spirit, the fruit deepening to dried fruit and a savoury spice. It sits near Aberlour, in the heart of Speyside by the River Spey. It had its own railway siding and a little locomotive, Dailuaine No.1, known as the Puggy. Its big stills give a heavy, full bodied spirit that takes sherry wood especially well.
At its natural 52.5% it is concentrated. A heavy, malty fruitiness, with a soft vanilla from the oak. Soft orchard fruit and a rich malt sit behind the cask. The close is long, fruit over a rich malt. This is Dailuaine, a backbone of the great blends.
