Single malt Dailuaine is rare, so most come from independents. Its big stills give a full bodied spirit that loves sherry wood. This is a robust backbone of the great blends.

Description
This Dailuaine was bottled by the bottler North Star Spirits, a 14 year old, distilled in 2007, bottled at 52.5%, one of 659 bottles. Dailuaine is a full bodied Speyside malt of real depth, mostly bottled by independents. The distillery was founded in 1852 by William Mackenzie on the banks of the Spey at Carron.
The spirit was made in large copper stills for a rich, robust make, to build a robust, malty, sherry loving character. A Pedro Ximenez cask added raisin, date and a treacle sweetness. Through integration spirit and wood marry, vanillin settling into vanilla as ethyl esters lend a riper orchard fruit over the meaty malt. Vanillin and oak lactones from the wood lend vanilla and coconut over the meaty malt. It passed to DCL and Scottish Malt Distillers in the 1920s and was later modernised. The slow loss of the angel's share concentrates the rich, malty core over the years.
At cask strength 52.5% it is full bodied. Malt, dried fruit and a rich spice, with dried fruit, fig and walnut from the cask. A baked fruit and a warm spice lift it. The finish runs meaty, fruity and warm. This is a rich, dried fruit laden Speyside single malt.
