A 14 year old Dailuaine from the Italian bottler Wilson and Morgan, distilled in 2007, from cask 303877+881, bottled at 53.9%, one of 529 bottles. Dailuaine was founded in 1852 by William Mackenzie, and was the first distillery to wear the pagoda roof. The name is Gaelic for the green vale, after the hollow in which the distillery sits.
The spirit was run through the distillery's big copper stills, to build a robust, malty, sherry loving character. A Pedro Ximenez cask added raisin, date and a treacle sweetness. In integration lactones (coconut) and vanillin (vanilla) knit with the malt, fruit deepening to dried fruit. Dailuaine's heavy, malty make is prized by blenders for the body it gives. It passed to DCL and Scottish Malt Distillers in the 1920s and was later modernised. A fire in 1917 destroyed the maltings, and the distillery was rebuilt soon after.
Bottled at a cask strength 53.9%, it is rich. Apple, dried fruit and a meaty edge, with raisin, date and treacle from the cask. A dried fruit and a malty depth give it weight. The finish runs meaty, fruity and warm. This is the robust, sherried malt of Carron.
