A Dailuaine of a 14 year old chosen by the Italian bottler Wilson and Morgan, distilled in 2007, from cask 303871 + 303873, bottled at 48%, one of 590 bottles. Dailuaine is a heavy, fruity Speyside single malt from near Aberlour. The name is Gaelic for the green vale, after the hollow in which the distillery sits.
Distilled for the heavy, full bodied spirit Dailuaine is known for, building the heavy Dailuaine style. Ex-Sherry wood added a deep dried fruit richness to the full bodied malt. By the integrating teens congeners fade and esters build, the rich, full bodied spirit growing rounder. Refill oak lets the robust Dailuaine character lead, malt and dried fruit beneath. The cool Speyside air gives a slow, even maturation, the heavy malt deepening. A first fill sherry cask suits the robust spirit, dried fruit meeting the meaty weight. Water comes from the Bailliemullich Burn, the spirit drawn off three wash and three spirit stills.
Bottled at a cask strength 48%, it is rich. Malt, dried fruit and a rich spice, with raisin, date and treacle from the cask. Soft orchard fruit and a rich malt sit behind the cask. The finish is long, rich and savoury. This is Dailuaine, a backbone of the great blends.
