The bottler Drm Mr bottled this Dailuaine, a 12 year old, distilled in 2013, from cask 302725, bottled at 55.7%, one of 274 bottles. Dailuaine is a Diageo Speyside distillery, its robust malt the backbone of many a blend. Its big stills give a heavy, full bodied spirit that takes sherry wood especially well.
The spirit was distilled for the heavy, full bodied spirit Dailuaine is known for, for the rich, full bodied make Dailuaine is known for. It rested in ex-Bourbon oak, the wood adding vanilla and a soft honey. In integration lactones (coconut) and vanillin (vanilla) knit with the malt, fruit deepening to dried fruit. The clean spirit shows the cask clearly, vanilla and fruit over a rich malt. The slow loss of the angel's share concentrates the rich, malty core over the years. Maturation in the cool north east keeps the rich spirit balanced over the years. A fire in 1917 destroyed the maltings, and the distillery was rebuilt soon after.
At its natural 55.7% it is concentrated. A robust, sherried maltiness, with a soft vanilla from the oak. Dried fruit, malt and a savoury spice fill the middle. The close is long, fruit over a rich malt. This is the robust, sherried malt of Carron.
