Description
This Dailuaine was bottled by the bottler Scotch Malt Whisky Society, a 12 year old, distilled in 2012, from cask 41.182, bottled at 53.1%, one of 287 bottles. Dailuaine is a heavy, fruity Speyside single malt from near Aberlour. Most of its make goes to blending, with a Flora and Fauna sixteen year old the regular single malt.
The spirit was made in large copper stills for a rich, robust make, building the heavy Dailuaine style. Maturation in an Oloroso cask laid dried fruit over the meaty, malty spirit. Integration folds eugenol (clove) and vanillin (vanilla) into the malt, the heavy body fuller and richer. The cool Speyside air gives a slow, even maturation, the heavy malt deepening. The slow loss of the angel's share concentrates the rich, malty core over the years. The full bodied make rewards a long, patient maturation in good wood.
At a hearty 53.1% it carries real weight. Dried fruit, malt and a rich, savoury depth, with raisin, date and treacle from the cask. Soft orchard fruit and a rich malt sit behind the cask. Dried fruit, malt and a savoury oak see out the finish. This is a rich, dried fruit laden Speyside single malt.
