Dailuaine 12 Years Old 2011 Cask #800376 (The Whisky Jury)

From the bottler The Whisky Jury, a 12 year old Dailuaine, distilled in 2011, from cask 800376, bottled at 59%, one of 204 bottles. Dailuaine is a full bodied Speyside malt of real depth, mostly bottled by independents. The name is Gaelic for the green vale, after the hollow in which the distillery sits.

It was distilled for the heavy, full bodied spirit Dailuaine is known for, building the heavy Dailuaine style. A refill bourbon hogshead held it, keeping the rich character to the fore. Integration folds eugenol (clove) and vanillin (vanilla) into the malt, the heavy body fuller and richer. Maturation in the cool north east keeps the rich spirit balanced over the years. The full bodied make rewards a long, patient maturation in good wood. A first fill sherry cask suits the robust spirit, dried fruit meeting the meaty weight.

At its natural 59% it is concentrated. Orchard fruit, malt and a warm spice, with a soft vanilla from the oak. The mouthfeel is heavy, the fruit carried on a meaty, malty body. A full, malty finish ends on dried fruit and a warm spice. This is the rich, full bodied Speyside malt of Dailuaine.
