Description
This Dailuaine was bottled by the Italian bottler Wilson and Morgan, a 12 year old, distilled in 2011, from cask 303578 + 303581, bottled at 56.3%, one of 530 bottles. Dailuaine is a full bodied Speyside malt of real depth, mostly bottled by independents. Most of its make goes to blending, with a Flora and Fauna sixteen year old the regular single malt.
It was distilled in large conical necked stills on Bailliemullich Burn water, for a big, full Speyside spirit. An Oloroso hogshead lent fig, raisin and a savoury, nutty depth, the heavy spirit soaking it up. In integration lactones (coconut) and vanillin (vanilla) knit with the malt, fruit deepening to dried fruit. The clean spirit shows the cask clearly, vanilla and fruit over a rich malt. The big stills give a heavy spirit that takes a long, sherried maturation in its stride. Vanillin and oak lactones from the wood lend vanilla and coconut over the meaty malt.
At its natural 56.3% it is concentrated. A heavy, malty fruitiness, with dried fruit, fig and walnut from the cask. It is robust and fruity, the full bodied spirit shining through. The finish runs meaty, fruity and warm. This is Dailuaine's heavy, meaty Speyside style.
