Description
From the Glasgow bottler Douglas Laing, a 12 year old Dailuaine, distilled in 2008, from cask DL 14007, bottled at 48.4%, one of 350 bottles. Dailuaine, founded in 1852, gave Scotch its first pagoda roofed kiln. Water comes from the Bailliemullich Burn, the spirit drawn off three wash and three spirit stills.
The spirit was distilled for the heavy, full bodied spirit Dailuaine is known for, for the rich, full bodied make Dailuaine is known for. A Pedro Ximenez cask added raisin, date and a treacle sweetness. Integration folds eugenol (clove) and vanillin (vanilla) into the malt, the heavy body fuller and richer. Long ageing turns the fresh fruit towards dried fruit, fig, leather and a warm spice. Refill oak lets the robust Dailuaine character lead, malt and dried fruit beneath. Dailuaine's heavy, malty make is prized by blenders for the body it gives.
Bottled at a cask strength 48.4%, it is rich. A robust, sherried maltiness, with dried fruit, fig and walnut from the cask. It is robust and fruity, the full bodied spirit shining through. A full, malty finish ends on dried fruit and a warm spice. This is Dailuaine, a backbone of the great blends.
