The bottler The Single Cask Ltd bottled this Dailuaine, a 12 year old, distilled in 2007, from cask 301313, bottled at 58.7%, one of 279 bottles. Dailuaine is a full bodied Speyside malt of real depth, mostly bottled by independents. The name is Gaelic for the green vale, after the hollow in which the distillery sits.
Run through the distillery's big copper stills, for the rich, full bodied make Dailuaine is known for. A bourbon barrel held it, vanilla and a soft spice over the malty spirit. Integration folds eugenol (clove) and vanillin (vanilla) into the malt, the heavy body fuller and richer. The big stills give a heavy spirit that takes a long, sherried maturation in its stride. Single malt Dailuaine is rare as an official bottling, so most come from independents. The distillery was founded in 1852 by William Mackenzie on the banks of the Spey at Carron.
At its natural 58.7% it is concentrated. A robust, sherried maltiness, with a soft vanilla from the oak. Soft orchard fruit and a rich malt sit behind the cask. A long, full finish carries a savoury depth. This is the rich, full bodied Speyside malt of Dailuaine.
