This Dailuaine was bottled by Pendulum Spirits, an 11 year old, at 53.2%. Full bodied and fruity, with orchard fruit, malt and a warm spice. Founded in 1852, it was the first distillery to use the pagoda roof. Its rich, heavy malt is a backbone of the Johnnie Walker blends. This is Dailuaine’s heavy, meaty Speyside style.

An 11 year old Dailuaine from Pendulum Spirits, distilled in 2013, from cask 324977, bottled at 53.2%, one of 294 bottles. Dailuaine, founded in 1852, gave Scotch its first pagoda roofed kiln. Most of its make goes to blending, with a Flora and Fauna sixteen year old the regular single malt.
It was worked through the big stills for a meaty, malty spirit, for the rich, full bodied make Dailuaine is known for. A bourbon barrel held it, vanilla and a soft spice over the malty spirit. Integration folds eugenol (clove) and vanillin (vanilla) into the malt, the heavy body fuller and richer. The rich, full bodied spirit takes cask flavour well, especially sherry wood. It had its own railway siding and a little locomotive, Dailuaine No.1, known as the Puggy. Long ageing turns the fresh fruit towards dried fruit, fig, leather and a warm spice. Vanillin and oak lactones from the wood lend vanilla and coconut over the meaty malt.
At its natural 53.2% it is concentrated. Orchard fruit, malt and a warm spice, with a soft vanilla from the oak. A dried fruit and a malty depth give it weight. The finish is long, rich and savoury. This is a rich, dried fruit laden Speyside single malt.
