Sukhinder Singh's Elixir Distillers bottled this Dailuaine, an 11 year old, distilled in 2012, from cask 300548, bottled at 58.3%, one of 563 bottles. Dailuaine, founded in 1852, gave Scotch its first pagoda roofed kiln. The distillery was founded in 1852 by William Mackenzie on the banks of the Spey at Carron.
The spirit was drawn off three wash and three spirit stills, for the rich, full bodied make Dailuaine is known for. It rested in ex-Bourbon oak, the wood adding vanilla and a soft honey. Through integration spirit and wood marry, vanillin settling into vanilla as ethyl esters lend a riper orchard fruit over the meaty malt. The clean spirit shows the cask clearly, vanilla and fruit over a rich malt. The rich, full bodied spirit takes cask flavour well, especially sherry wood. Most of its make goes to blending, with a Flora and Fauna sixteen year old the regular single malt.
At a natural 58.3% it is full and honeyed. Malt, dried fruit and a rich spice, with a soft vanilla from the oak. The texture is full and rich, the fruit lifted by a meaty malt. Dried fruit, malt and a savoury oak see out the finish. This is a rich, dried fruit laden Speyside single malt.
