Dailuaine 11 Years Old 2010 Cask #308834 (Pendulum Spirits Ltd)

An 11 year old Dailuaine from Pendulum Spirits, distilled in 2010, from cask 308834, bottled at 59.1%, one of 275 bottles. Dailuaine is a rich, meaty Speyside single malt from the banks of the Spey near Aberlour. The distillery was founded in 1852 by William Mackenzie on the banks of the Spey at Carron.

Worked through the big stills for a meaty, malty spirit, to build a robust, malty, sherry loving character. First fill bourbon gave a fuller vanilla over the robust spirit. Integration folds eugenol (clove) and vanillin (vanilla) into the malt, the heavy body fuller and richer. The slow loss of the angel's share concentrates the rich, malty core over the years. Dailuaine's heavy, malty make is prized by blenders for the body it gives. Its rich, robust malt has long been a backbone of the Johnnie Walker blends. The big stills give a heavy spirit that takes a long, sherried maturation in its stride.

At a hearty 59.1% it carries real weight. Baked fruit, fig and a savoury depth, with a soft vanilla from the oak. Dried fruit, malt and a savoury spice fill the middle. The close is long, fruit over a rich malt. This is Dailuaine, a backbone of the great blends.
