Description
An 11 year old Dailuaine from Pendulum Spirits, distilled in 2010, from cask 308829, bottled at 56.3%, one of 62 bottles. Dailuaine is a robust Speyside distillery at Carron, making a full bodied malt mostly for blends. The distillery was founded in 1852 by William Mackenzie on the banks of the Spey at Carron.
The spirit was run through the distillery's big copper stills, for the rich, full bodied make Dailuaine is known for. Maturation came in ex-Bourbon wood, the oak quiet behind the meaty malt. Integration folds eugenol (clove) and vanillin (vanilla) into the malt, the heavy body fuller and richer. The cool Speyside air gives a slow, even maturation, the heavy malt deepening. Water comes from the Bailliemullich Burn, the spirit drawn off three wash and three spirit stills. The name is Gaelic for the green vale, after the hollow in which the distillery sits.
At cask strength 56.3% it is full bodied. Orchard fruit, malt and a warm spice, with a soft vanilla from the oak. Beneath it run dried fruit, malt and a savoury edge. A full, malty finish ends on dried fruit and a warm spice. This is a full bodied Speyside single malt of real depth.
