From the revived blender James Eadie, a 10 year old Dailuaine, bottled at 48.3%. Dailuaine sits at Carron on the Spey, a big, sherried Speyside malt rarely seen on its own. It passed to DCL and Scottish Malt Distillers in the 1920s and was later modernised.
Made in large copper stills for a rich, robust make, for a rich, meaty make that suits sherry wood. Ex-Sherry wood added a deep dried fruit richness to the full bodied malt. Integration folds eugenol (clove) and vanillin (vanilla) into the malt, the heavy body fuller and richer. The big stills give a heavy spirit that takes a long, sherried maturation in its stride. It sits near Aberlour, in the heart of Speyside by the River Spey. Its big stills give a heavy, full bodied spirit that takes sherry wood especially well. Water comes from the Bailliemullich Burn, the spirit drawn off three wash and three spirit stills.
At a hearty 48.3% it carries real weight. A robust, sherried maltiness, with dried fruit, fig and walnut from the cask. It is robust and fruity, the full bodied spirit shining through. Dried fruit, malt and a savoury oak see out the finish. This is a rich, malty Speyside single malt.
