This Dailuaine was bottled by the Pitlochry bottler Signatory Vintage, a 10 year old, distilled in 2012, from cask 308757+308759, bottled at 46%. Dailuaine is a Diageo Speyside distillery, its robust malt the backbone of many a blend. Its rich, robust malt has long been a backbone of the Johnnie Walker blends.
Distilled for the heavy, full bodied spirit Dailuaine is known for, for the rich, full bodied make Dailuaine is known for. Maturation came in ex-Bourbon wood, the oak quiet behind the meaty malt. Integration folds eugenol (clove) and vanillin (vanilla) into the malt, the heavy body fuller and richer. The full bodied make rewards a long, patient maturation in good wood. The distillery was founded in 1852 by William Mackenzie on the banks of the Spey at Carron. The clean spirit shows the cask clearly, vanilla and fruit over a rich malt.
At an approachable 46% it is soft and easy. Apple, dried fruit and a meaty edge, with a soft vanilla from the oak. A baked fruit and a warm spice lift it. A full, malty finish ends on dried fruit and a warm spice. This is a full bodied Speyside single malt of real depth.
