Dailuaine 10 Years Old 2012 Cask #308754+58+62+63 (Signatory)

A 10 year old Dailuaine from the Pitlochry bottler Signatory Vintage, distilled in 2012, from cask 308754+58+62+63, bottled at 46%. Dailuaine is a robust Speyside distillery at Carron, making a full bodied malt mostly for blends. It sits near Aberlour, in the heart of Speyside by the River Spey.

It was distilled in large conical necked stills on Bailliemullich Burn water, giving the heavy, meaty spirit at its heart. First fill bourbon gave a fuller vanilla over the robust spirit. By the integrating teens congeners fade and esters build, the rich, full bodied spirit growing rounder. Vanillin and oak lactones from the wood lend vanilla and coconut over the meaty malt. A first fill sherry cask suits the robust spirit, dried fruit meeting the meaty weight. The full bodied make rewards a long, patient maturation in good wood. Long ageing turns the fresh fruit towards dried fruit, fig, leather and a warm spice.

At 46% it is smooth and honeyed. Orchard fruit, malt and a warm spice, with a soft vanilla from the oak. It is robust and fruity, the full bodied spirit shining through. The finish is deep, rich and savoury. This is Dailuaine, a backbone of the great blends.
