    A 10 year old Dailuaine from Pendulum Spirits, 2012, at 56.6%. Apple, dried fruit and a meaty malt over a full body. Dailuaine is a robust Speyside distillery at Carron, near Aberlour. Water comes from the Bailliemullich Burn on the banks of the Spey. Owned by Diageo, with a Flora and Fauna 16 year old the regular single malt. This is a robust backbone of the great blends.

    A 10 year old Dailuaine from Pendulum Spirits, distilled in 2012, from cask 303771, bottled at 56.6%, one of 264 bottles. Dailuaine is a rich, meaty Speyside single malt from the banks of the Spey near Aberlour. Its big stills give a heavy, full bodied spirit that takes sherry wood especially well.

    It was worked through the big stills for a meaty, malty spirit, for the rich, full bodied make Dailuaine is known for. First fill bourbon gave a fuller vanilla over the robust spirit. In integration lactones (coconut) and vanillin (vanilla) knit with the malt, fruit deepening to dried fruit. Vanillin and oak lactones from the wood lend vanilla and coconut over the meaty malt. Long ageing turns the fresh fruit towards dried fruit, fig, leather and a warm spice. The full bodied make rewards a long, patient maturation in good wood. A fire in 1917 destroyed the maltings, and the distillery was rebuilt soon after.

    At a natural 56.6% it is full and honeyed. Dried fruit, malt and a rich, savoury depth, with a soft vanilla from the oak. Dried fruit, malt and a savoury spice fill the middle. A long, full finish carries a savoury depth. This is the rich, full bodied Speyside malt of Dailuaine.
