Description
An 11 year old Daftmill, a distillery bottling, from 2009, cask 47,48,50,52/2009, at 46%, 1785 bottles in all. Daftmill is a light, floral Lowland single malt made from the farm's own barley. Water comes from a private well on the farm, the spirit run through a single pair of onion shaped stills.
It was distilled slowly for a light, elegant Lowland spirit, for a light, floral make of real finesse. Ex-Sherry wood added a dried fruit richness to the elegant spirit. Integration folds eugenol (clove) and vanillin (vanilla) into the malt, the delicate body fuller and softer. Years in oak round the spirit, the grass and citrus deepening to honey and orchard fruit. The farm steading dates to the 18th century, the distillery built quietly into its old buildings. Releases come as Summer and Winter batches, single casks and the odd cask strength bottling. Refill oak lets the delicate Daftmill character lead, lemon and green apple beneath.
At 46% it is smooth and honeyed. Lemon, pear and a soft malt, with dried fruit, fig and walnut from the cask. Lemon, pear and a soft honey fill the middle. A long, honeyed finish carries a citrus lift. This is the patient farm malt of Fife.
