This official Daftmill, a 13 year old, from 2009, cask 030/2009, at 58.8%, 211 bottles in all. Daftmill, founded in 2005, did not release its first whisky until 2018, after more than a decade in cask. Barley is grown on the farm itself, malted nearby, in a true field to bottle approach.
Made in copper stills from the farm's own barley, for the light, elegant make Daftmill is known for. A refill bourbon hogshead held it, keeping the light character to the fore. In integration lactones (coconut) and vanillin (vanilla) knit with the spirit, lemon deepening to honey. Each small batch is laid down with patience, the whisky released only when ready. It is one of the smallest distilleries in Scotland, with a tiny annual output. Long ageing turns the fresh lemon towards honey, apple and a soft spice. The farm steading dates to the 18th century, the distillery built quietly into its old buildings.
Bottled at a cask strength 58.8%, it is rich. Lemon, pear and a soft malt, with a soft vanilla from the oak. The mouthfeel is light, the fruit carried on a clean body. Apple, honey and a soft oak see out the finish. This is an elegant, grassy Lowland malt of real finesse.
