Description
This official Daftmill, a 13 year old, from 2007, cask 026/2007, at 58.2%, 226 bottles in all. Daftmill is a delicate, fruity Lowland single malt from a farm distillery in the heart of Fife. The distillery runs only seasonally, in the quiet weeks of summer and winter between sowing and harvest.
The spirit was run through the distillery's small copper stills, for a refined, citrussy spirit. First fill bourbon gave a fuller vanilla over the delicate spirit. In integration lactones (coconut) and vanillin (vanilla) knit with the spirit, lemon deepening to honey. Years in oak round the spirit, the grass and citrus deepening to honey and orchard fruit. Each release is small and quickly allocated, prized by collectors of the new wave of Scotch. Water comes from a private well on the farm, the spirit run through a single pair of onion shaped stills. A gentle maturation suits the light make, the fruit growing richer with time.
At a natural 58.2% it is full and honeyed. Grass, citrus and a gentle vanilla, with a soft vanilla from the oak. A grassy citrus and a soft oak give it lift. It finishes light, fresh and floral. This is an elegant, grassy Lowland malt of real finesse.
