Description
An official release of Daftmill, a 15 year old, from 2007, at 56.3%. Daftmill, on a Fife farm, makes one of the smallest outputs of any distillery in Scotland. Water comes from a private well on the farm, the spirit run through a single pair of onion shaped stills.
Drawn off the onion shaped stills of the Fife farm, for a light, floral make of real finesse. A refill bourbon hogshead held it, keeping the light character to the fore. Through oxidative maturity esters concentrate, grass and lemon turning to honey over a waxy, delicate body. The cool Lowland air gives a slow, even maturation in the farm dunnage warehouse. Releases come as Summer and Winter batches, single casks and the odd cask strength bottling. The light, elegant make is a model of the classic Lowland style. The distillery runs only seasonally, in the quiet weeks of summer and winter between sowing and harvest.
At a hearty 56.3% it carries real weight. A delicate, fruity sweetness, with a soft vanilla from the oak. The mouthfeel is light, the fruit carried on a clean body. The close is clean, fruit over a gentle oak. This is a clean, fruity Lowland single malt.
