A 15 year old Daftmill from the distillery, at 55.7%. Apple, pear and a soft honey over a clean body. It distils only seasonally, between sowing and harvest on the working farm. Releases come as Summer and Winter batches and single casks. Matured mostly in ex-Bourbon casks in a farm dunnage warehouse. This is a light, floral Lowland malt of real finesse.

Description
This official Daftmill, a 15 year old, from 2006, at 55.7%, 5338 bottles in all. Daftmill is a tiny farm distillery in Fife, making a light, elegant Lowland single malt. The light, elegant make is a model of the classic Lowland style.
It was made in copper stills from the farm's own barley, giving the delicate, floral Lowland spirit. First fill bourbon gave a fuller vanilla over the delicate spirit. Into oxidative maturity, slow air ingress builds fruity ethyl esters (apple, pear and a little tropical fruit) over the floral malt. The light, elegant spirit takes cask flavour gently while keeping its grass and citrus. The farm's own barley and a slow distillation give a clean, elegant spirit. The clean spirit shows the cask clearly, vanilla and honey over a grassy citrus. The patient, restrained approach has made Daftmill one of the most sought after of the new distilleries.
Bottled at a cask strength 55.7%, it is rich. A delicate, fruity sweetness, with a soft vanilla from the oak. A green apple and a gentle spice lift it. The finish is clean, delicate and fruity. This is an elegant, grassy Lowland malt of real finesse.
