Description
An 11 year old Daftmill, a distillery bottling, from 2010, cask 46,47,50,51,56/2010, at 59.5%. Daftmill is a seasonal farm distillery, distilling only in the quiet weeks between sowing and harvest. Maturation is mostly in ex-Bourbon casks, with a little sherry, in a dunnage warehouse on the farm.
The spirit was distilled in a single pair of onion shaped stills on farm well water, to build a clean, fruity, grassy character. A bourbon barrel held it, vanilla and a soft citrus over the grassy malt. By the integrating teens the spirit rounds out, ethyl esters building a clean orchard fruit over the grassy malt. Long ageing turns the fresh lemon towards honey, apple and a soft spice. Water comes from a private well on the farm, the spirit run through a single pair of onion shaped stills. The patient, restrained approach has made Daftmill one of the most sought after of the new distilleries.
At cask strength 59.5% it is full bodied. A clean, grassy citrus, with a soft vanilla from the oak. It is delicate and fruity, the elegant spirit shining through. The finish runs delicate, grassy and fresh. This is Daftmill's delicate, floral Lowland style.
