Description
Curado Blanco is the Blanco from Carlos Camarena, made at the Los Alambiques distillery, NOM 1474, in Arandas in the Jalisco highlands. It carries 100% agave status and is bottled free of additives, a deliberate showcase of ripe Los Altos Blue Weber selected at six to seven years old for full sugar development.
The agave is cooked slowly for up to 48 hours in masonry brick ovens, then extracted on a modified stainless cane mill. Natural yeast ferments the juice in open wooden tanks, and a double distillation in copper and stainless follows before a four to six month rest in steel to settle the spirit. The result reads fresh and clean, with citrus of lemon and lime, soft herbal notes, raw agave and a hint of white pepper over a delicate mineral base typical of the highlands.
