Cuevas de Arom is Fernando Mora’s mountain Garnacha project in Calatayud. Os Cantals comes from vines planted in 1935 on slate, sandstone and quartzite at 800 metres in Murero, vinified for an elegant, fresh profile and aged 12 months in oak.
Description
Os Cantals is made by Cuevas de Arom, the project Fernando Mora set up to vinify old Garnacha from the mountains of D.O. Calatayud in Aragon using traditional methods, named for the caves where wine was once made in the area. The fruit comes from 2.2 hectares in the village of Murero, planted in 1935 on slate, sandstone and quartzite soils at 800 metres, farmed sustainably. These poor, stony soils restrict vigour while the altitude and cool nights slow ripening, so the vines crop little and the grapes keep their acidity and aromatic detail; the result is fresh and elegant rather than heavy, at a measured 14% alcohol. Twelve months in oak barrels settle the tannin and add a light spice without masking the fruit. The colour is bright, medium ruby. The nose shows wild red berries, cherry and a hint of white stone fruit over thyme, pepper and a stony, earthy minerality. The palate is light to medium bodied, fresh and savoury, with fine tannin and a long, mineral finish. Serve at 16 degrees. It suits roast pork, game birds and mushroom dishes.
