Description
Cuevas de Arom is the work of Bodegas San Alejandro in D.O. Calatayud, in Aragón, and this organic red is made from Garnacha Tinta. Calatayud is high, dry and continental, with old Garnacha vines rooted in poor slate and stony soils that limit yields and concentrate the fruit. The altitude and the cold nights preserve acidity and aromatic lift in a warm growing region, which keeps a wine of this ripeness fresh rather than heavy. Ageing runs for around 10 months in old stone lagares and cement, vessels that allow gentle micro-oxygenation without adding oak flavour, so the fruit and the mineral character of the site lead. The nose is a fine weave of red currant and cherry with subtle white pepper and thyme over a stony, mineral backdrop. The palate is medium to full bodied, with bright red fruit, garrigue herbs and fine, savoury tannins lifted by good acidity into a clean, lingering finish. Serve at 16 degrees, and a short decant helps. It works with herb-crusted lamb, grilled beef and earthy mushroom dishes.
