Description
Cuatro Rayas farms in the D.O. Rueda around Valladolid, and this single-variety Verdejo is the lead wine in its Vendimia Nocturna range. The grapes come from vineyards over forty years old, whose deep roots draw on Rueda's gravelly, stony soils and give concentration and a firm mineral spine. The region sits on a high plateau where hot days and cold nights preserve aromatics and acidity, and picking at night brings the fruit in cool, limiting oxidation before it reaches the cellar. A short cold soak on the skins before fermentation extracts the varietal aromatics Verdejo is known for, the herbal, almost bitter edge that sets it apart. Fermentation is cool in stainless steel to hold the fresh character, and the wine is farmed organically and is suitable for vegans. It is pale with green tints. The nose shows green apple, white peach and cut hay over citrus peel and white flowers. The palate is fresh and rounded, with a balanced weight and a faintly bitter, savoury finish typical of the grape. Serve at 8 to 10 degrees. It works as an aperitif and with shellfish.
