Description
Cuatro Rayas is a large cooperative winery in Valladolid, at the heart of the Rueda appellation, and this wine is made from Verdejo grown under certified organic farming. Rueda sits on the high plateau of Castilla y León, where wide day-to-night temperature swings and stony, well-drained soils help the grapes keep their acidity and aromatic freshness through the warm summer. The bunches are harvested at night to hold the fruit's quality and aromatics in the cool. The must ferments in stainless steel and the wine then spends three months on its fine lees with regular stirring, a method that adds a little texture and roundness while keeping the fruit bright and the wine free of oak. Farming is organic and the wine is vegan. The colour is pale straw with green tints. The nose is vibrant, with juicy green apple and lemon joined by pear, white flowers and a green, thyme-like herbal note, and the palate is crisp and dry, the citrus fruit lifted by a saline freshness and Verdejo's characteristic bitter almond twist on the finish. Serve well chilled at 8 to 10 degrees in a white glass.
