Cap de Barbaria farms near the famous lighthouse on Formentera, on arid stony ground above the sea. Cova Rosa is a young Monastrell rosé, pale and dry, with strawberry, peach and an island saltiness. A Mediterranean aperitif.
Description
Cova Rosa comes from Cap de Barbaria, a small winery on Formentera set on the road to the island's landmark lighthouse. The vines grow on arid, stony ground among low Mediterranean scrub, with the sea on every side, and the intense light and salt-laden air give ripe fruit that is picked early to hold freshness. The wine is made from Monastrell, a dark-skinned grape that gives colour and red fruit fast, pressed gently and fermented cool in stainless steel to keep the aromatics clean and the texture free of tannin. The result is a pale pink rosé with a nose of strawberry, cherry and white peach over a faint floral note. The palate is dry and bright, the warm-climate fruit cut by fresh acidity and finished with a savoury, saline edge that reflects the exposed coastal site. There is no oak, so the wine stays direct and immediate, made for early drinking in the sun. Serve well chilled at 8 to 10 degrees as an aperitif, or with grilled seafood and light salads.
