Courbet Chateau-Chalon is a Savagnin from the Jura made by Damien Courbet. Aged six years under a veil of flor in the region’s oxidative tradition, it shows walnut, dried apricot, green apple and a savoury, umami finish.

Description
Courbet is a family estate in the Jura, in eastern France, established in 1869 and reshaped by Damien Courbet since 2011. This is a Chateau-Chalon, the appellation reserved for the region's Vin Jaune, made entirely from the Savagnin grape and farmed organically and biodynamically. After fermentation the wine is aged for six years in old barrels under a natural veil of flor, a film of yeast that forms on the wine's surface and is left without topping up. Under the flor the wine slowly oxidises, and air exposure converts alcohol to acetaldehyde, giving the nutty, apple-skin and curry-spice character that defines the style. The yeast also contributes a savoury, umami depth. The colour is deep gold. The nose is intense and complex, with walnut, almond, dried apricot and green apple over a savoury, spiced note. The palate is bone-dry, powerful and long, the oxidative character balanced by firm acidity and a saline, umami finish that lasts. This is a wine to serve at around 14C in a larger glass, ideally opened and decanted an hour ahead.







Additional information
The oxidative, nutty style is made for Comte and other hard mountain cheeses, as well as chicken in a cream and morel sauce. It also suits roast white fish and mushroom dishes, where its savoury depth and dryness come into their own.
