Cotopaxi is an Ecuadorian rum named for the country's towering volcano, bottled as a single cask with thirteen years of age. It comes from a corner of South America still little explored by rum drinkers, offering a glimpse of what the region's distilleries can produce with extended ageing.
Distilled from molasses on a column still and matured in ex-bourbon wood, it was bottled at a soft 40%. The nose is fruity and concentrated, with caramel and dried fruit, while the palate brings candied notes, barrel and a rounded sweetness. The finish turns toasted and nutty with a bitter, faintly medicinal edge that some find a touch much. Tasters describe it as a relatively simple, lightly sweet rum reminiscent of easy sipping Dominican styles, with a slightly watered feel at this strength.
