Description
Bodegas Aragonesas produce Coto de Hayas Tempranillo Cabernet Roble in Campo de Borja, in Aragon, from a blend of Tempranillo and Cabernet Sauvignon grown on vines close to thirty years old. The warm, dry continental climate of the region ripens both grapes fully, with Tempranillo supplying red fruit and a soft, supple core and Cabernet Sauvignon adding darker fruit, firmer tannin and a herbal edge. The fruit is fermented and macerated for around three weeks to draw out colour and gentle tannin, then run off and pressed before blending. The wine then spends a short four months in American oak barrels, a roble style that keeps the emphasis on fresh fruit while adding a light frame of vanilla and sweet spice, the American oak lending a rounder, sweeter tone than French wood would. It is a vivid cherry red with violet tints, showing bright cherry, plum and red berries lifted by a touch of pepper, dried herbs and vanilla. The palate is youthful and juicy, with soft tannins and a fresh, fruit-forward finish. Serve at 16 degrees. It suits everyday grilled and roasted meats.
