Description
Bodegas Aragonesas makes Coto de Hayas Vinas del Cierzo in Campo de Borja, a warm corner of Aragon known for old Garnacha. The blend is Garnacha at 86 percent with Syrah at 10 and Mazuelo at 4, grown on terraces of ferrous clay whose iron rich soil and warm climate ripen the fruit fully. The region is swept by the cierzo, the cold dry north wind that gives the wine its name and helps keep the vineyard healthy and the fruit fresh. Vinification follows traditional methods, with fermentation held between 28 and 30 degrees, then maceration on the skins in tank to draw colour, tannin and flavour from the grapes. The wine then ages 12 months in French oak, which rounds the tannins through slow oxygen exchange and adds spice. The Syrah brings pepper and a darker edge to the Garnacha fruit. It pours a deep red, with aromas of ripe red and dark berries, plum and pepper over liquorice, smoke and herbs. The palate is full and warming at 14 percent, with ripe fruit and a savoury finish. Serve at 16 to 17 degrees. It suits grilled and roast meat.
