Description
On Ischia, viticulture means farming near vertical volcanic slopes held up by the parracine, the dry stone terrace walls built without cement. Costa delle Parracine grows Biancolella, the island's leading white variety, on this ground. Volcanic tuff and porous mineral soils drain quickly and store the day's heat, while coastal winds and slope elevation lock in acidity, which is why the wine keeps its freshness and its saline lift in a warm southern climate. Fermentation is followed by four months in oak barrel, a restrained ageing that builds a little texture and a soft nutty edge while leaving the fruit clear. The colour is bright straw yellow. The nose leads with white peach and lemon, backed by green apple and white flowers, over a stony, salty base. On the palate it is dry, medium bodied and mineral, with almond and a clean sea salt finish drawn from the volcanic soil. Serve chilled at 8 to 10 degrees in a white wine glass.
