Description
Còsmic Vinyaters was founded by Salvador Batlle with a focus on biodynamic farming and minimal intervention in the cellar. This white comes from the Alt Empordà in Girona, close to the Catalan coast and the French border, an area swept by the Tramuntana wind that keeps vines dry and healthy and reduces the need for treatments. The grape is Cariñena Blanca, farmed on biodynamic principles, and the wine is made in a natural style, vegan and with little added, resting a couple of months in separate containers. Without oak or heavy handling, the fruit and the coastal, herb-scented character of the site come through clearly, while the short settling gives a light texture. Expect some of the gentle cloudiness and savoury edge typical of low-intervention whites. The colour is pale lemon, sometimes slightly hazy. The nose shows lemon, green apple and white peach, with white flowers and a note of dried Mediterranean herbs. The palate is dry, fresh and lightly textured, with a saline, mineral finish. Serve at 9 to 11 degrees.

Additional information
Its freshness and herbal lift suit grilled fish, calamari and shellfish, along with green salads and vegetable dishes. Serve it chilled as an aperitif with olives and anchovies. The saline, low-intervention style also works with fresh goats' cheese.
