Description
Còsmic Passió is a natural red made by Còsmic Vinyaters in the Penedès, a project founded by Salvador Batlle on biodynamic principles and minimal intervention. It is made from Marselan, a cross of Cabernet Sauvignon and Grenache, grown in a single Baix Penedès vineyard planted at 500 metres above sea level. That altitude brings cool nights and a wide diurnal range, which preserves acidity and freshness in a warm Mediterranean climate even as the grapes ripen fully to 15 percent alcohol. The wine undergoes a 48-hour pre-fermentation skin maceration to draw colour and aroma, then ferments on its skins before resting four months on its lees in stainless steel. The lees ageing adds texture and roundness, while the absence of oak keeps the fruit pure and the style fresh and unadorned. It is deep ruby, with ripe blackberry, plum and red cherry on the nose over black pepper, crushed herbs and an earthy edge. The palate is full and juicy, with ripe tannin, fresh acidity and a savoury, herbal finish. Serve lightly cool at around 16 degrees. A natural partner for grilled meats and tomato-rich dishes.
