Description
Cortijo Los Aguilares makes this single-variety Pinot Noir in the Sierras de Málaga, in Andalusia. All the fruit comes from one three-hectare vineyard at 900 metres above sea level, on the clay and limestone soils typical of the area. Altitude is central to the wine: in a warm southern region, the elevation brings cool nights and a wide diurnal range that keeps freshness and holds the delicate aromatics of Pinot Noir, while the limestone drives acidity. Winemaking follows traditional methods, and the wine is aged for around eight months, with part in oak of up to 500 litres, where the larger format gives a gentle oxygen exchange that rounds the texture without dominating the fruit. The colour is bright, medium ruby. The nose shows ripe red cherry and raspberry with plum, rose and a savoury, earthy note. The palate is medium bodied, with fine tannin, fresh acidity and a spiced, savoury finish. Serve at 15 to 16 degrees in a wide glass. It suits roast duck, poultry and mushroom dishes.
