Corazon Anejo is the aged expression of the Casa San Matias single estate range, built from 100% Blue Weber agave grown on the family fields in Los Altos de Jalisco and tended on site from harvest through stone-oven cooking, distillation and bottling. A working relationship with the Sazerac Company supplies the casks, giving it a deep, whisky-leaning character.
It spends roughly sixteen to eighteen months in American oak, frequently former Buffalo Trace bourbon barrels. The nose runs intense with vanilla, caramelised honey, maple and clear oak, edged by almond, dried fruit and baked pineapple. The palate is silky and oily, blending cooked agave with butterscotch, dark chocolate and bitter notes of tobacco, coffee and leather over fine citrus. It closes on dry oak spice, white pepper and a quiet caramel sweetness.
