An 11 year single cask Foursquare from 2010 by The Colours of Rum at 61.1%, dry and bourbon-leaning with coconut, vanilla, toffee and pineapple over firm oak, unsweetened and built for full-proof sipping.
Description
The Colours of Rum, the young Warsaw-based purist bottler known for cask-strength single casks with no additives, released this Foursquare from the 2010 vintage, an 11 year Barbados rum at full proof. Foursquare, Richard Seale's St Philip estate, blends pot and column still rum and bottles strictly dry, so this is authentic, island-aged Bajan rum carrying only barrel character.
Matured in ex-bourbon oak, it leans firmly bourbon-driven: vanilla, toffee and a clear bourbon note on the nose, then burnt sugar, spice and more bourbon over firm alcohol on the palate, with coconut, light chocolate and a flash of pineapple, finishing on barrel, dark chocolate and roasted notes. At 61.1% it is assertive and fairly linear, best given time or a splash of water to settle the heat. A credible, dry, full-proof Foursquare for drinkers who enjoy the estate's bourbon-leaning side, if a touch simpler than the headline casks.
