Copaltree Copalli Barrel Rested Rum

Copalli is made by Copaltree, an organic single estate distillery in southern Belize that works its own cane and ferments with rainforest spring water. The Barrel Rested expression is a molasses rum given light cask time and bottled at 44 percent, prized for an unusual, spirit forward character rather than plush oak.

The young barrel influence keeps it fresh and lean, with a fruity, citrus and floral nose moving into a vegetal, lemony palate over soft wood, then a nutty, green wood finish with a distinct grappa and Obstler vibe. The body is light and the wood gentle, so it reads more like a characterful young spirit than a rich sipping rum. That makes it a fun, slightly offbeat choice for cocktails and daiquiris, where its citrus and grassy notes add lift, with enough quirk to interest curious drinkers neat.
